Tofu and vegetable stir-fry recipe

In this forties, eating healthy and at regular times is a challenge. This forced leave has its lots of benefits for everyone, but also its lots of challenges. Indeed, everyone is pushed to stay disciplined while pivoting their lifestyle.
Eating healthy is essential during this time. Of course, we have the right to cheat and be a little more indulgent to ourselves, BUT this period is crucial in our life to take the time to adjust and reflect (I know, I too was surprised that this either a real word). 


So I concocted a little easy, simple, but above all GOOD, recipe to make you want to eat fresh food (before you run out of it, kidding). It’s so simple, I ate it two days in a row. Whether it's for a quick lunch, a dinner or a side dish, you will undoubtedly have the nutrients you need to get through this virus!


I'll give you a recipe, but it's up to you to adjust it to your liking. You can also just take what is left on hand. It would also be very possible to make it with frozen vegetables. We manage to eat well gang!

At the end, out of gluttony, I added a little secret ingredient: Thai chili sauce. On the other hand, the version without sauce is just as good! You could even add a little soy sauce and a little honey and VOILÀ! 



Ingredients: 

½ Chili 

¼ Cauliflower

2 stalks of celery

½ Squash

⅓ Broccoli

½ red onion

½ Brick of smoked tofu

1 tbsp of olive oil

Vegetable spices to taste

Onion powder to taste

Salt & Pepper to taste

⅓ cup Water 

⅓ cup Walnuts

⅓ cup chopped almonds


Optional: 

1 tsp Thai Chili Sauce

OR

2 tbsp soy sauce + 1 tbsp honey


Steps to follow : 


1- Chop the chilli, cauliflower, celery, squash, broccoli, red onion and coarsely smoked tofu. 


2- Heat the pan on medium. Pour a drizzle of oil into the pan. Add the tofu. Cook until golden brown. 


3- Add the cut vegetables.


4- Add the vegetable spices, onion powder and salt and pepper.


5- Pour water. Cover for 5 minutes.


6- Add the nuts. Mix. 


7- & here! You can serve.
